Here is another proof (and what a proof!) that our Açai berries can be perfectly processed in savoury dishes. The combination of sweet potato, Açai and herbs is one that makes us giggle with pleasure. What a fantastic dish!
Holy Berry - Açai 1 pack
Nut paste (almond paste, cashew paste, tahini...)1/3 cup
Juice of 1 orange
Zest of 1 orange
Fresh parsley 1 cup
Hemp seeds1/4 cup
Soaked goji berries1/4 cup
Black sesame seeds2 tbsp
Fresh mint 2 tbsp
Olive oil1 tbsp
How do you make it?
Preheat the oven to 180°c. Prick the sweet potato with a fork and heat it in the preheated oven for 40 minutes.
Chop the parsley and capers and put them in a bowl. Add sesame seeds, hemp seeds, mint, soaked goji berries and olive oil.
Combine all ingredients for the Açai dressing in a blender. Cut the sweet potatoes in half and scoop out the flesh. Add it to your topping and combine. Fill again with the potato filling.
Top with fresh parsley and anything else you like! Serve with Açai dressing.
