STUFFED SWEET POTATO WITH AÇAI DRESSING AND FRESH HERBS

Here is another proof (and what a proof!) that our Açai berries can be perfectly processed in savoury dishes. The combination of sweet potato, Açai and herbs is one that makes us giggle with pleasure. What a fantastic dish!

Ingredients

  • Holy Berry -  Açai 1 pack

  • Sweet potato
    2

  • Nut paste (almond paste, cashew paste, tahini...)1/3 cup

  • Water
    1/3 cup

  • Vinegar1 tbsp

  • Miso paste
    1 tsp

  • Juice of 1 orange 

  • Zest of 1 orange 
     

Toppings

  • Fresh parsley 1 cup

  • Hemp seeds1/4 cup

  • Capers1/4 cup

  • Soaked goji berries1/4 cup

  • Black sesame seeds2 tbsp

  • Fresh mint 2 tbsp

  • Olive oil1 tbsp

How do you make it?

Step 1

Preheat the oven to 180°c. Prick the sweet potato with a fork and heat it in the preheated oven for 40 minutes.

Chop the parsley and capers and put them in a bowl. Add sesame seeds, hemp seeds, mint, soaked goji berries and olive oil.

Combine all ingredients for the Açai dressing in a blender. Cut the sweet potatoes in half and scoop out the flesh. Add it to your topping and combine. Fill again with the potato filling. 

Step 2

Top with fresh parsley and anything else you like! Serve with Açai dressing.
