
Who doesn't like a cake? And then in combination with our delicious Açai! This cake will make sure that your day does not only start happily but also healthily!

Ingredients
Holy Berry - Açai 1 pack
Almond flour60 g
Erythritol (or a sweetener of choice)25 g + 2 tbsp
Egg yolk
1Melted butter40 g
Gelatine sheets
3Juice and zest of lime1
Frozen red fruit
100 gMascarpone140 g
Cream
110 mlPinch of salt
Pinch of cinnamon

How do you make it?
Step 1
Preheat the oven to 175 °C.
Start by making your base. Mix the almond flour with 25g erythritol, the egg yolk, the melted butter and season with salt and cinnamon. Pour the batter into two springforms and press. Place in the oven for 20 minutes at 175 °C. Take care! Every oven is different.
When the base is baked, let it cool completely. Meanwhile, you can start on the filling. Soak the gelatine sheets in cold water for 10 minutes. Take a small saucepan and heat the juice of 1 lime with the mix of frozen red fruit, 2 tbsp erythritol and the packet of Açai. At the end, add the squeezed-out gelatine leaves.
In a separate bowl, whip up the mascarpone. Mix in the cream and zest of 1 lime.
Put both bowls together and make sure that everything is well mixed. Then pour the mixture into the springforms and place in the fridge for at least 4 hours so that it can set properly.
Step 2
Once it has set, you can enjoy it! Decorate your cake with granola and red fruit.
