AÇAI BREAKFAST TARTS WITH GRANOLA BASE

Would you like a pie? Oh yes, why not?! And indeed, why not! In life you have to enjoy yourself and especially when it's healthy. A cake based on Açai with a granola base, ideal to take with you to snack on before or after your workout. Keep reading to find out which power foods are included.

Ingredients

  • Holy Berry -  Açai & guarana1 pack

  • Pitted dates 50 g

  • Granola40 g

  • Oatmeal15 g

  • Melted coconut oil
    1/2 tbsp

  • Banana
    1

  • Plain cheese or plant-based alternative
    350 g

  • Frozen blueberries
    50 g

  • Gelatine sheets
    3

Toppings

  • Blueberries

  • Mint

  • Granola

How do you make it?

Step 1

Soak the dates for 5 minutes in boiling water. Drain. Put the dates with the granola, oatmeal and coconut oil in the food processor and mix finely. You will now get a sticky mass.

Take the cupcake moulds and spread the mixture over the bottom. Press down well with a spoon. Place in the fridge until the yoghurt layer is ready.

Crush the banana and put it in a saucepan together with the yoghurt and the melted Açai. Warm gently but do not boil! In the meantime, put the gelatine in cold water and let it soften. Squeeze the gelatine well and add it to the slightly warmed Açai preparation until it has dissolved. Finally, mix in the frozen blueberries.

Divide the Açai-yoghurt mixture over the cupcake moulds. Place in the freezer and leave to set. Preferably do this overnight. Serve in the morning at breakfast.

Finish with blueberries, mint and granola.
