“The proof of the pudding is in the eating”, you can take that literally with this little recipe. Just try it and you will see, this pudding is delicious and oh so nutritious! The jelly consistency is obtained by soaking the chia seeds overnight in the plant-based milk. That chia seeds also contain protein makes them even more special. Also, the peanuts in peanut butter (peanuts, by the way, are not nuts but legumes) are rich in protein so let those muscles grow!
What do you need?
- 1/3 pack Holy Berry – Açai berries, defrosted
- 150 ml plant-based milk
- 3 tbsp chia seeds
- 50 g plant-based yogurt
- 2 tbsp agave syrup
- 2 tbsp peanut butter
How do you make it?
The night before, mix the chia seeds with the plant-based milk and 1 tablespoon of agave syrup. Put this in your refrigerator. The day after, this is a nice firm pudding. Take a nice glass or bowl, cover the bottom with the peanut butter and pour the chia pudding over it. On top of the chia pudding, you then add the plant-based yogurt. Next, take a saucepan and warm the thawed Açai berries with 1 tbsp agave syrup very shortly (no longer than about 2 minutes). Pour this warm Açai coulis on top of your layer of yogurt. Finish with some fresh mint and granola. Enjoy!
