Winter is coming and we’re ready for it! This delicious Açai bowl with warm toppings arms you and your kids like no other against cold, drizzly weather and provides all the nutrients you need to get through the day energetically. Because anyone who thinks that Açai can only be eaten in the summer is dead wrong! In the winter our immunity is usually a bit lower, partly due to the lack of sunlight, making foods rich in nutrients all the more important! Let yourself be surprised by this delicious recipe, developed by the one and only miss Oliva from Fitfoodness!
What do you need?
- 1 bag Holy Berry – Açai – banana – blueberry mix (150g)
- 2 + 1 tbsp vegetable yoghurt (e.g. coconut yoghurt)
- 1/2 apple, cut into cubes
- ¼ tsp ground cinnamon
- 1 tbsp maple syrup
- 1 tbsp almond butter
- 1 tbsp granola
- Cubes of coconut butter or olive oil
- Cocoa nibs
How do you make it?
Sauté the apple cubes in some coconut oil over medium-high heat until they caramelize and soften but still retain some bite, about 5 minutes. Add a few drops of water if necessary to keep them from burning. In the end, stir in the maple syrup and set aside.
Blend the Holy Berry Açai mix bag with 2 tbsp of vegetable yogurt until you get a creamy consistency. You can do this in a blender or with a good hand blender.
Pour the Açai mix into a nice bowl, smooth the top with the back of your spoon and decorate: first the yogurt, then the apples with the maple syrup, and then the almond butter. Top with granola and cacao nibs. Sprinkle some extra cinnamon on top to finish the bowl and enjoy this cozy moment!
