What do you need for the pancakes?

  • 1 banana, fresh
  • 100g oatmeal
  • 80ml plant-based milk
  • 80g plant-based yoghurt such as coconut yoghurt
  • 1 tsp baking powder
  • Pinch of salt
  • Seeds of 1/2 vanilla pod or 1 sachet vanilla sugar
  • 1 tbsp coconut oil, melted + extra coconut oil for frying

How do you make them?

Put all ingredients in a blender and blend until you have a smooth batter. Melt some coconut oil in a frying pan and fry small pancakes with the batter.

What do you need for the Pitaya coulis?

  • 1 packet of Holy Berry Pitaya – 100% Deep pink, defrosted
  • ½ packet of Holy Berry Passion Fruit – Smooth & Seedless, defrosted
  • 1 banana, fresh
  • Dash of (coconut) water

How do you make it?

Mix everything together until liquid and warm slightly (don’t let it boil!) Pour the warm coulis over the pancakes

Finishing:

Garnish the pancakes with blueberries, banana slices, coconut yogurt, maple syrup, melted chocolate, coconut flakes… Pour the pitaya coulis on top and serve!

Tip 1:

You can let the packet of Pitaya and the packet of Passion Fruit thaw in the fridge or put them in lukewarm water for a while until they are melted.

Tip 2:

The coulis can be stored in a sealed jar in the fridge for 2 days.
