My oooh my !! That special moment in life you discover that a bounty can be delicious AND healthy!

This is what they call “Real guilt-free snacking”, peeps!

What do you need?

  • 1 fresh passion fruit
  • 240g coconut rind
  • 60ml coconut cream (the top part of a cold can of coconut milk)
  • 2 tbsp coconut oil, melted
  • 1 tbsp cacao butter, melted
  • 2-3 tbsp agave/coconut nectar
  • Pinch of salt
  • Few drops of vanilla extract or 1/8 tsp vanilla powder
  • 1/2 tsp lime juice
  • 1/4 tsp lime zest
  • Dark chocolate

How do you make it?

Blend everything except the coconut rind and chocolate in a blender or with a hand blender until smooth. Add the coconut rind and mix briefly until combined. Put the coconut mixture in a small baking tray that you have lined with plastic wrap or baking paper and smooth out the mass and with such a thickness of 1-1.5cm Place it in the freezer for an hour, so you can easily demould it afterwards and cut it into cubes or bars with a sharp knife. Melt the chocolate au bain- marie and dip the coconut mixture cubes into the chocolate (using a fork), tap the edge of the bowl with your fork to let the excess chocolate drip off and place the bounties on a baking sheet to let the chocolate set further (this goes fast because the coconut cubes are well cold).
