What do you need for 4 people?

  • 300g oat flour (ready-made from the store or easy to make yourself by just mixing oatmeal in a blender into flour)
  • 2 tsp baking powder
  • 2 tbsp honey
  • 1 vanilla pod
  • 2 eggs
  • 600 ml almond milk
  • 1 pack Holy Berry – Pink Pitaya, defrosted
  • Coconut oil to grease the waffle iron with

 

How do you make it?

Sift the oat flour into a bowl. Add the baking powder to it. Then add the honey. Cut the vanilla pod lengthwise and scrape off the black seeds along the inside and add them to the batter. Break the eggs and add them to the mixture. Mix everything together very gently with a whisk until nicely blended. Gently add the milk while stirring until you obtain a smooth and even batter. Finally, add the Pink Pitaya and mix again gently until the color is nice and pink. Allow the batter to rest for 30 minutes. Grease the waffle iron well with coconut oil. Using a (wooden) spoon, scoop the batter onto the iron and bake gently for approximately between 7 and 10 minutes.

 

Tip:

You can let the packet of Pitaya thaw in the fridge or put it in lukewarm water for a while until melted.
