What do you need?

  • 1 packet of Holy Berry Pitaya – 100% Deep Pink, defrosted
  • 50 ml plant-based yogurt (coconut or soy)
  • 150 ml coconut milk
  • ¼ tsp agar
  • 4-5 tbsp agave syrup
  • Seeds of a 1/2 vanilla pod or 1 packet of vanilla sugar
  • 1/2 pack of Passion Fruit – Smooth & Seedless, defrosted (optional)

 

How do you make it?

Place the agar with the coconut milk and agave syrup in a saucepan, mix well and bring to a boil. Stir frequently. Let it boil gently for 30 seconds.

Meanwhile, put the packet of Pitaya, the yogurt and the seeds of half a vanilla pod in a blender and blend. Then pour in the agar coconut milk mixture and blend until everything is well blended. Pour into glasses and let cool. Garnish with granola, fresh fruit and coconut zest.

 

Tip 1:

You can let the packet of Pitaya and the packet of Passion Fruit thaw in the fridge or put them in lukewarm water for a while until they are melted.

Tip 2:

You can also work with a few drops of qualitative vanilla extract.
